Who has not seen the now viral Dubai Bar on social media – it has taken the chocolate world by storm. When I finally got one to try, I was both really impressed by the originality of the bar and disappointed by how super sugary sweet it was.
In that great Charles Chocolates tradition, we set out to make what we think is the ultimate expression of that really cool idea.
Instead of sweet milk chocolate, we use a rich, lucious, bittersweet chocolate blend that truly compliments the pistachio and crisp shredded kataifi filling. And while we are talking about the filling, every version of the Dubai Bar that I have tried uses a pre-made, very sweet pistachio cream. Given that we were both trying to reduce the sweetness and also stick to our “we make everything from scratch” ethos, our pistachio cream is made fresh here in our kitchens from premium fresh pistachio nuts.
Finally, and because we love to play in the kitchen, we have created two additional flavors that are every bit as good as the original. Try all three – you won’t be disappointed!
Ingredients: Bittersweet chocolate 65% cacao (Cacao beans, cane sugar, cocoa butter, sunflower lecithin, vanilla beans), pistachios, powdered sugar,
kataifi (wheat flour), white chocolate (cocoa butter, cane sugar, full cream milk, lactose, sunflower lecithin, vanilla beans), cocoa butter, salt, colored cocoa
butter.

Wasn't quite sure what to expect, as this was my first time trying any kind of Dubai inspired chocolate bar, but I was very pleasantly surprised by the flavor. In fact, I attempted to make this bar last through the week and it's already gone. I love that it's not too sweet (the salt is such a nice touch), and the filo dough is delightfully crispy. The bar is also beautiful as well!
The only downside is, living out of state, this is going to be an expensive addiction. Perhaps as a treat every other month or so! :P
After waffling back and forth on whether to try this bar, I finally caved and purchased it, swayed by the fact that this version uses dark chocolate rather than milk chocolate (which I am usually not a fan of).
I loved this bar! It's definitely thick and hefty, but still easy to break off a square cleanly. I liked that the filling had a salty note to it, and that the kataifi crunch was somehow very delicate and crisp. I ate the first one too fast, and now I need to go back and buy some more, as well as try the other flavors!
I recently tried this Charles chocolate bar, and I have to say it's better than the OG from Ceres hands down! At 100 calories a square, you better believe it's incredibly rich, yet it's also light and crispy. I love pistachios and dark chocolate, so you could hardly have made a better bar for me. I'm an S.F. native. Now prouder than ever.
