We’ve been working on something exciting over the past few months.

On a recent trip to Japan I fell in love with the versatility of sesame paste. The simple process of toasting and grinding sesame seeds into a soft and creamy paste transforms a fairly common seed into an uncommon and delicious ingredient.

Using sesame paste from blond, medium roasted and black sesame seeds we then went to work creating a trio of truffles that enhanced the paste with caramelized white chocolate, milk chocolate and bittersweet chocolate, respectively.  Rather than coat each piece in chocolate, we roll them in sesame seeds for a really great textural contrast.

These truffles are rich, balanced and a little bit nutty. They are an unexpected and addictive new treat.
